This Old Cheese made from raw whole ewe’s milk has a strong palate with a rich earthy aroma, semi firm texture, ivory colour and small and irregular eyes. Aging time: 12 months. Full-fat cheese with 65% FDM and 50% M.G.M. s/ES. Ingredients: raw whole ewe’s milk, salt, rennet and milk ferments.
